As a guitarist myself, I find it impossible to choose just one. Here are some of them:-

The lists already posted cover so many great solos, but I'd like to mention Kotaro Oshio.
His cover of Merry Christmas Mr Lawrence is just brilliant and maybe my favourite.
His cover of Bolero is pretty damn fine too.

A fairly obvious choice, I know, but both solos in Comfortably Numb (especially the second one) still blow me away.

Most of Slash's album solos are memorable and really good fun to play i.e. Nightrain, Sweet Child, Rocket Queen, Locomotive, Estranged, Don't Cry etc. Coma is pretty special, the way it cycles around in 5ths.

Love all the classics like Stairway, Hotel California, loads of Thin Lizzy stuff, and virtually everything by the more tasteful virtuoso types like Eric Johnson and Robben Ford. I love jazz and country these days but I don't tend to think of the great guitar work in those genres as 'guitar solos' for some reason.

If I had to pick only one favourite solo, it would be Nightrain. Even though it's basically just dicking around in a natural minor, it's such a cool solo that builds nicely to a pure crescendo of energy and it has so many cool bends, runs and licks but still has melody as well. It's great fun to play live cause you can't just phone that shit in, you have to get so into it to play it with any semblance of authenticity.

Not too keen on angular, fast shredding that doesn't have any nuance. I think Dimebag was by far the best / most interesting and unique sounding of the heavy guys and he wrote some wicked solos. Still saddens me to this day that he was taken away from us.

That would be my choice too, but Gilmour excels so often there are many other candidates.

Ritchie Blackmore also has many classics, but my favourite is probably in When a Blind Man Cries.

Robert Fripp's solo in The Sailor's Tale on the very low-fi Earthbound live album always sends shivers up my spine. I've never heard so many plaintiff and emotional sounds being wrung from a guitar and the subtle use of feedback is exquisite.

For a solo of a more conventional nature, I love the sound that Bill Nelson gets on Crying To The Sky, although it is a bit like Robin Trower.

I'm not a fan of rock guitar solos at all, but I do like Jonny Greenwood's solo on Paranoid Android (Radiohead).
