Rather random but have encountered:
Stephen Fry (total angel)
Archbishop of Canterbury (can I count him as a celeb?) who was v. charming.
Joe Jackson (a bit twitchy at being approached, but very polite)
Linford Christie (ditto)
Poet John Hegley - met him in a bar, told him I loved his poetry and he immediately bought me a drink.
In my hospital working days also witnessed visit by Prince Charles - a young teenage patient bellowed, "F*** me, it's Prince Charles!" at which he laughed quite nicely.
Also Prince Edward, looking shy and ill-at-ease, while his wife looked every inch the born royal.
