  Did you have your iPad synced to a computer? If so you can manually reinstall the old version via iTunes as the app will be saved on your computer.
  
  On a side note, Apple recently made some changes that allow developers to leave older versions of their apps available in the App Store to solve exactly this sort of problem, so maybe this is something you could request Facebook does. If enough people ask for it they might do it.

  At a push (should a compatible version not be installed on your computer) you could access Facebook via your browser of choice?
  
  Not ideal, I know, especially for apps that don't have an Internet page but it's one work around until the dev team at Facebook roll out a legacy app as Roush mentioned.
