I can't choose just one. Commando on the C64 The original Battlefield Bad Company I loved and still play online now. GTA Vice City and SA were great , the Far Cry series, Red Dead Redemption is up there too and one of the best games made for me.
Very difficult to call, but I'd have to say the original God Of War. The other titles have maybe done gameplay and technical mastery better, but the story in the original is perfect and the locations, such as Pandora's Box and the Aegean Sea, are incredible.
I'm never 100% sure about my favourite game of all time, but I always think that if I had to choose it'd be Yoshi's Island. Just a brilliant game, love it.

I want to say Donkey Kong (Arcade)!
I want to say Robotron:2084 (Arcade)!
In earnest, though over the last 6 years I've probably gone back to the Gears of War Trilogy (360) more than anything else.
Yeah this was bloody incredible - it was such a massive environment, bopping across the post apocalyptic wastes and cities.
