Cliched because I don't know a huge amount compared to some people, but probably the end of November Rain.

As a guitarist myself, I find it impossible to choose just one. Here are some of them:-

Rock The Night - Europe (John Norum)
Is This Love - Whitesnake (John Sykes)
November Rain - Guns 'n' Roses (Slash)
Don't Turn Away - Whitesnake (John Sykes)
Stone Cold - Rainbow (Ritchie Blackmore)
Stranger In a Strange Land - Iron Maiden (Adrian Smith)
Keep The Faith - Bon Jovi (Richie Sambora)
Child In Time - Deep Purple (Ritchie Blackmore)
I'll Wait - Van Halen (Eddie Van Halen)
To Live Forever - Dream Theater (John Petrucci)

I could go on and on, but will leave it at that :p

As another guitarist, I too find it hard to pick just one. So here's a list of those I recommend:

    AC/DC - Rising Power
    Deep Purple - Burn
    Deep Purple - Highway Star
    Foo Fighters - Rope
Gary Clarke Jr - 'Aint Messin' Round
Guns N' Roses - You Could Be Mine
    I - The Storm I Ride
    Kiss - Deuce
Led Zeppelin - Stairway To Heaven
    Ozzy Osbourne - Miracle Man
Paul Gilbert - I Like Rock
Rick Derringer - Rock & Roll, Hoochie Coo
    The Rolling Stones - Sway
    Unida - Black Woman
    Velvet Revolver - Slither
    Venom - Kill The Music
    Wendy O' Williams - **** That Booty
Whitesnake - Fool For Your Loving (the 1980 original)
ZZ Top - Beer Drinkers & Hell Raisers

The lists already posted cover so many great solos, but I'd like to mention Kotaro Oshio.
His cover of Merry Christmas Mr Lawrence is just brilliant and maybe my favourite.
His cover of Bolero is pretty damn fine too.

A fairly obvious choice, I know, but both solos in Comfortably Numb (especially the second one) still blow me away.

Most of Slash's album solos are memorable and really good fun to play i.e. Nightrain, Sweet Child, Rocket Queen, Locomotive, Estranged, Don't Cry etc. Coma is pretty special, the way it cycles around in 5ths.

Love all the classics like Stairway, Hotel California, loads of Thin Lizzy stuff, and virtually everything by the more tasteful virtuoso types like Eric Johnson and Robben Ford. I love jazz and country these days but I don't tend to think of the great guitar work in those genres as 'guitar solos' for some reason.

If I had to pick only one favourite solo, it would be Nightrain. Even though it's basically just dicking around in a natural minor, it's such a cool solo that builds nicely to a pure crescendo of energy and it has so many cool bends, runs and licks but still has melody as well. It's great fun to play live cause you can't just phone that shit in, you have to get so into it to play it with any semblance of authenticity.

Not too keen on angular, fast shredding that doesn't have any nuance. I think Dimebag was by far the best / most interesting and unique sounding of the heavy guys and he wrote some wicked solos. Still saddens me to this day that he was taken away from us.

Just about any solo John Platania has ever done, especially his incredible work with arguably the greatest judge of musical talent on the planet, Van Morrison.

That would be my choice too, but Gilmour excels so often there are many other candidates.

Ritchie Blackmore also has many classics, but my favourite is probably in When a Blind Man Cries.

Hard for me to choose from one in particular from these three:

Peter Green's acoustic playing during Oh Well Part 2

Would also add parisienne walkways, as an accomplished guitarist i find that speed isn't everything and pure emotion is all that matters.

    A little bit of variety....

Lynyrd Skynyrd - Free Bird - the greatest if not just one solo

Steve Harley and Cockney Rebel - Come Up and See Me - second take apparently

The Stone Roses - Waterfall - beautifully melodic

Blue Oyster Cult - Don't Fear The Reaper - surprisingly evocative

Dr Feelgood - I'm a hog for you baby one note Wilko

Robert Fripp's solo in The Sailor's Tale on the very low-fi Earthbound live album always sends shivers up my spine. I've never heard so many plaintiff and emotional sounds being wrung from a guitar and the subtle use of feedback is exquisite.

For a solo of a more conventional nature, I love the sound that Bill Nelson gets on Crying To The Sky, although it is a bit like Robin Trower.

I'm not a fan of rock guitar solos at all, but I do like Jonny Greenwood's solo on Paranoid Android (Radiohead).

    Metallica - One
Stevie Ray Vaughan - Little Wing
    Ram Jam - Black Betty
The Knack - My Sharona (Incidentally the solo in Paranoid Android is similar in almost out of control nature of the solo)

Jimmy Page's solo on Since I've Been Loving You. He makes that guitar cry.
