I want to make a pork casserole type thing but dont want to eat it today, how long will it keep in the fridge? would it be ok to make it today and eat it saturday or sunday?
One more question, am I right in thinking to thicken stock up I need to add cornflour?

You can thicken with cornflour though i prefer to use potato to thicken personally. Especially in a casserole type thing.
when its boiled down "to nothing", they cant notice. thats what makes it thicken the sauce.
Leave food out until it's gone cold ( 2- 3 hours,no more) then put in fridge.
Never leave it in the fridge more than two nights.
So if you make a casserole Friday...make sure it's eaten by sunday night.
The exception to this is rice, ready meals and takeaway...all of these should be eaten with 24 hours.
