  I'm usually cooking for two but I tend to just go with the larger sizes and freeze the extra for another day.

  Practice makes perfect as they say.
  
  As suggested, freezing is a great idea.
  
  So is turning the dish into something different for the next day.

  I cook for two but generally make meals for four and we just have half the following day.
  
  Maybe you should start making things with chicken breasts, steaks, chops etc. Those recipes are a lot easier to adapt to two than things such as pies, stews etc.
