Oxtail soup
I'm planning on making oxtail soup tomorrow with this recipe:
http://www.bbcgoodfood.com/recipes/12434/oxtail-soup The recipe says 1 1/4 kg of oxtail,I only have 600g. How should I adjust for less meat particularly for timings and quantities of the other ingredients. Also, the oxtail has been in the freezer since the end of February and has been thawing in my fridge since this morning. Will it be o.k to use? Lastly, does anybody have any other recipes for oxtail soup they can share with me? |

http://i31.photobucket.com/albums/c3...1/c534cc49.jpg This is oxtail soup made by my mum. Deeeeeeelicious! Ingredients are oxtail, celery, water, spinach, onions, salt and pepper. I think there may have been orange split lentils too.

The oxtail will still be fine, well as long as it smells okay.
Keep the cooking time the same as oxtail needs long slow cooking to get the best out of it and become tender. Reduce the other ingredients to a bit over half what the recipe says - the amount of oxtail you have is really plenty enough to do 3/4. I spotted some oxtail in Morrisons today but was put off by the price. It used to be dirt cheap at one time.
