I should also mention Minecraft. Hours go by and you realize you've just basically futzed about not really doing much but being greatly absorbed as you farm, mine, spellunk, and just amble about exploring. For such a simple game it has such hidden depths, both literally and figuratively.

Everquest (1) here, spent all my gaming hours on it from release to about 2004,and quite a few non gaming hours. Was doing silly things like playing through the night weekends, and generally planning my life around raids and such. Scary thing is that I know people from those days still playing the game religiously, I dread to think of the percentage of their lives spent on it.
