I also made a new invention, which I have named 'Toffee Apple Pie Cupcakes'. They are a cinnamon cake with a dollop of applesauce inside, topped with vanilla icing drizzled with toffee sauce. The piping was not to my usual standard (getting to grips with my brand new Lakeland giant nozzles!), plus I under filled the cases:

Hazza, that looks SPECTACULAR! Is that another Nigella? I vaguely remember seeing that somewhere before.

Got the recipe from BBC Good Food website. I like to do a few veggie meals each week, and this one so happens to be healthy too.

I think next time I do it I'm going to add a layer of spiced lamb mince though, just to give it that extra something. Mmmmm

Birthday Cupcakes

Did these on Friday for my friend's son's 7th birthday party. They are designs I have done before really, but doing this big batch of 30 cupcakes took ages!

That's the recipe I use because I'm on a diet. it's amazing how low cal it for being stuffed with cheese. Mine looks exactly the same as yours when I make it.

If anyone here is trying to lose weight I really recommend the good food website. it has folders for recipes under 200cal and recipes between 200-400 cals. I haven't made a single meal over 400 cals since I've been on this diet but they have all been such varied yummy recipes, you don't even notice the change.

You're food is looking amazing everyone. I'm making healthy fishcakes tonight with a rocket salad and will hopefully post pictures later if they come out well.

Thanks for the comments guys. Really enjoyed making them, so will definitely give it another go.

I just added 5 drops of blue food colouring to the butter cream for the colour.

It doesn't taste like duck at all. It's like a more flavoursome chicken - a bit gamey but not too strong.
