I'd go for some of Richard Thompson's solos - there are pretty good ones on 'Can't win' and 'Hard on me' on record, but when he does them live they are just jaw-droppingly brilliant. He doesn't rely on sheer speed, although he can play fast if he wants to, but he is so inventive - sometimes, you wonder where on earth he's going with the solo, but it always comes back to the song.
I'm always torn between wondering why he isn't one of the biggest stars around and being glad that I can still see him in reasonable sized venues when he tours.

U2 - 11 o'clock tick tock. The Red Rocks version is THE definitive one however.

Black Sabbath - Paranoid
Pantera - Mouth For War
Pink Floyd - Still Talking
The man himself, Tony Iommi, demonstrating that solo.

I like the guitar (and bass and keyboard) solos in the long version of "Walk On By" by The Stranglers.
Seeing how Funkadelic are cropping up I thought I'd follow the 70s funk genre and mention "Slide" by Slave... absolutely awesome!

Lot of my favs have aready been mentioned but I'm surprised to see no Van Halen tracks mentioned and I may come in for some stick for this but Eddie Van Halens solo on Beat it by Michael Jackson deserves a mention

Others not yet mentioned would be:

Eruption - Van Halen

Cold Sweat/Thunder and lightening - John Sykes - Thin Lizzy
