iPod syncing problem

Just got given an iPod Classic for my birthday, very nice gift, but here's the problem I have with it.
It seems I cannot delete albums on my iTunes without it also deleting them on my iPod, it's so annoying!
I have a lot of music on a portable hard drive, about 50GB, and ideally I'd like it all on my iPod, but my little old computer can't hold that many at once - and when I try to delete them to make room, it goes and deletes the music from my iPod as well!
It's pointless having a 160GB capacity on my iPod if I can only fill a quarter of it at any one time. Is there any way I can get it to do what I want?
