My list:
Stacey and Shenice: sisters
New Lauren and Courtney: cousins
Mickey and Demi: brother and sister
Gary and Big Mo: weren't they also siblings?
Dawn from EE has a sister in another soap?

Any additions?

I only watch EE, so I don't know about any other soaps

    Dawn from EE aka Kara Tointon's sister Hannah Tointon played Katy Fox in HO

    Also Fletcher O'Leary aka Mickey Gannon in Neighbours is the older brother of Blake O'Leary who also starred in Neighbours as Ben Kirk

    The boys who played Mickey and Ben in Neighbours are brothers. Fletcher and Blake O'Leary I think.

    Kym Valentine who plays Libby in Neighbours was some relation to Jiordan Anna Tolli who was the original Lolly. I think she was married to her cousin.

    Apparently the boys who played Josh and Freddie Peacock in Corrie were brothers in real life as well as on screen. I think it was twins that played Freddie.
