Last minute holidays

We are looking to book a last minute/late deal holiday and it's starting to feel like we are playing chicken with the travel companies!
We can travel any time from next Saturday, we know what we want to spend roughly and are fairly open on everything else. Is there a 'sweet' time to book? We have been keeping our eyes open for the last couple of weeks and have noticed some prices starting to rise on certain breaks and are torn between getting something booked now so its done or waiting out the really good deals. If it comes to it we can wait til the day before but it would be nice to have a few days prep time.
Any tips greatly received!

Then just book a flight with which ever airline is cheapest.
You can opt for flight only, flight plus car, flight plus hotel or a package, (I think you can opt for package.)
Hardly surprising, given it's still early August.

All inclusive mostly, and some really good savings / hotels come up. Use trip advisor as some of the hotels dont rate better than others.
We did this last year. Booked on the monday,flew on the friday. Wonderful week.
