  To delete an app hold down on app icon until wiggle and then press little cross on app.
  
  To transfer photos from pc sync with iTunes.

  Press and hold the app you want to delete and it should start wobbling and a cross will appear in the corner - press that to delete it
  
  For photos, my computer always recognises the phone as a device when I plug it in and I just choose to view photos in Explorer (not sure if you have Windows or a Mac?) and copy them from there. I'm not sure of another way of doing it though if that's not an option for you.
