Just need to mention a wonderful book I took possession of last week: its called 'Roots' by Diane Morgan
Basically, the clue is in the title. The book tackles root vegetables, offering each root as a chapter with information regarding history, lore availabilty, preparation and so on, preceding the recipes (well over 200). From the standard Carrot, Potato, Artichoke and Turnip to the more unusual Andean Tuber, Crosne, Arrowhead and Rutabaga, this book covers root vegetables within a creative, seductive and highly tempting array of recipes.
Morgan also delivers chapters on herb/spice roots such as Ginger, Parsley, Galangal and Wasabi.
Sadly, there aren't any reviews on Amazon, but I happened upon this book on some American foodie blog and the reviews were amazing. Unfortunately, I can't remember where I found it!!
