Yeah it's been establised that once returned to there own time all but the Doctor's apart from the current one forget the encounter so in the Day of the Doctor (unless Moffat screws up again like he kinda did I Time Crash) Tennant and Hurt will forget the encounter when they return to there own time but Smith's Doctor will remember. I think this has something to do the the Laws of Time and the Doctor not being allowed to know what his future self will look like. (Otherwise Tennant's Doctor would have known he wasn't going to be ginger in this next incarnation and therefore Smith wouldn't have said "Still not ginger" when he regenerated from Tennant)
I always explain some of that away with the fact that although they're meeting a future incarnation, they never know WHICH future incarnation. So even if 10 remembers meeting 11, the "still not ginger" line still makes sense as he didn't know 11 was the face immediately following his current one.
