Inspired by the Waterworld thread, I had remembered that Jack Black had an early role in that movie...but he is unrecognisable under goggles and helmet as the pilot of a plane attacks Costner's boat.

Trying to remember any other examples...found this one with Harrison Ford...

This scene from the Terminator (WARNING - GRAPHIC VIOLENCE)

I'll let someone else name him, it's not Arnie.
If you don't recognize his face, I think his voice will give him away.

    Paxton?

He also had a small part in Commando as a naval radio operator.

Meh Paul Newman movie The Verdict from 1982 is a double whammy for blink and you'll miss them stars to be. Lurking in the background as extras in the courtroom are John McClane and Jigsaw (both on the right of the screen near the top, Bruce has hair so that might blindside you initially).

The one with blue spikes is Bill Paxton.

The blond is Brian ????, who went on to become a villain or antagonist in many action films during the 1980s and 1990s. The last time I saw him was in The X-Files (TV series) when he was an alien hunter. He was in Buffy the Slayer as well. A friend used to joke that he was "Richard Chamberlain on steroids". Perfect description. :D

No idea on the first one. Looks a bit like Ewen Bremner, though.

That always pops up on before they were famous.

Not really blink-and-you'll-miss her but Audrey Hepburn's first screen appearance as a stewardess in a 1948 Dutch travelogue.

Samuel L Jackson also turns up playing as Eddie Murphy's uncle at the beginning of Murphy's stand up show Raw. That one is a bit odd.

Kevin Costner is the corpse being dressed for burial in the opening credits of The Big Chill. He did feature in flashback scenes but they didn't make the final cut.

There is a long-standing rumour that Sean Connery had a minor (non-speaking) role in "A Night to Remember" (the 1958 picture about the Titanic). Many people still believe he's in it, but I believe it to be a bit of Hollywood fiction.

He's also at the frat party in the morgue in 'Night Shift'.

I was also going to say Jeff Goldblum as one of the rapists in Death Wish but somebody has beaten me to it so I'll say Jeff Goldblum making a phone call in 'Annie Hall'. :)

James McAvoy is the silhouetted soldier about to be executed on the DVD cover of Regeneration, although it's his only scene in the film.

A younger and thinner Seth Rogen has a small part in Donnie Darko.

Illy Allen was in William Shakespeare's Hamlet with Kenneth Branagh. I suspect her Dad got her that little role so she had the chance to dress up.

No, he wasn't in it, but that should be a bit of Pinewood fiction.

Not so much an early role, but Mel Gibson makes a brief appearance in Fairy Tale: A True Story as the little girl's dad who comes home at the end of the film.
