Coconut milk

Hi food lovers

I made a homemade curry tonight with coconut milk,tinned tomatoes,tikka masala paste veg and prawns (it was yummy) just wondering if anyone has any ideas for using up half a tin of coconut milk?
Would it work in a rice pudding?

    Any other type of curry. A quick tikka massala or thai type curry.

    I'm in the same boat. I've got have a tin left and i'm making a variation on a pepper pot stew. It will be a basic "british" lamb stew (potatoes, carrots, swede) but with added pepper, all spice, chilli and coconut milk.

    Yeah. Pour it in a glass and drink it!!! Yummy!!!

    Make Rice and Peas - cook the rice in the milk (similar to rice pudding but using long grain) with a sprig of Thyme, a chopped clove of garlic and a finely chopped onion, salt and pepper and a scotch bonnet (left whole) then when cooked stir in a tin of kidney beans and you're done. Luvverly served with Jerk Chicken.

    Thanks for all the replies,I have gone with a rice pud which is in the slow cooker as we speak. I used half milk, half coconut and cinnamon and I am going to stir in some tinned mango towards the end.

    Great with porridge too.

    Half a can (with the rest of the mix being water) is ideal for a single portion. Sprinkle on a little ground cinnamon - maybe add some thinly sliced bannana and enjoy.

    Make Pannacotta with Cream, Vanilla and Coconut Milk. Very nice. :)

    Make some batter and do fish and chips.

    200gramms flour
    1 egg
    2 tbps fish sauce
    1/2 can of coconut milk.

    Bloody lovely
