Gluten/ Wheat free Peanut Butter Cookies

Here's a really nice recipe for anyone on a gluten/ wheat free diet. And a nice treat over Christmas!

Preheat oven 170c-fan assisted oven (190c for conventional oven)

1 large egg
3/4 cup of sugar
1 tsp gluten free baking soda (I use Super Cook Gluten Free)
1 cup of peanut butter
1/2 tsp vanilla essence
1/2 chopped nuts
1/2 cup ground almonds

Beat egg, sugar, baking soda and vanilla.
Add peanut butter and nuts. Mix well.
Roll the mix into balls with your hands, and put on a greased tray (makes up to 14 cookies), and flatten and score them with the back of a fork.

Bake for 10 minutes. Leave to cool.
