I'd imagine you'll be able to use ya GC controller (via that adaptor) when the relevant games hit the WiiU VC!
Possible I suppose, providing of course you can actually get hold of the adapter.

I will have a look when in town tomorrow, I really enjoyed the levels in Super Mario 3D World but controlling the camera via the accelerometer is a pita.

No you don't have to, you can use the right stick.
