What the title suggests, mine are...
Faye Dunaway in the 60s/70s, was anyone better in that period? Bonnie and Clyde, Chinatown and Network. Amazing movies!
Diane Keaton in Annie Hall and Reds.. love those movies.
Jane Fonda in They Shoot Horses Don't They? and Klute!
I know they're all still working today, but nothing will compare to their glory days. Especially now with the exception of Diane they look like waxwork figures of themselves.
Obviously going further back there is great ones like the Hepburns, Davis etc but I couldn't pinpoint just a couple good movies from them, the majority are (not including Davis in her later years of course).

Veronica Lake
Theresa Russell
and although I hate to say so, I do believe Bette Davis was a good actress (even if a little OTT)
sounds like a standard cop-out - but she did appear to be amusing at times.
