My slow cooker. I don't use it all the time but it is invaluable for those days where you fancy something like a stew but can't be doing with attending to it all day long - you can bung all the ingredients in, add your stock/chopped tomatoes or whatever, bung the lid on, switch it to 'Auto' and then go do something more interested for the day!
A good set of knives and a variety of things like whisks, garlic crushers, mashers, apple corers, graters etc. I haven't one now but I used to love my slow cooker.

We have been living in a rented apartment for 6 weeks without any of my usual kitchen gadgets except a pressure cooker so I can say all of them.
Did not realised I used my oven so much - Vitamix where are you, steamer, toaster, decent knives, my egg poaching and omelette pans, Actifry (no chips for 6 weeks) food processor etc etc.
Taking a rice cooker away from a Sri Lankan is like removing one of their limbs!
When I was leaving for university, almost every relative in the family gave me a good-luck present. I ended up with nine rice cookers. Everyone said, "Well, keep it in case one breaks down." The idea of living in a place without a rice cooker was apparently utterly unthinkable.
