Hi, I need a quick chicken casserole/stew/ slow cooker recipe for today. I don't feel up to cooking a roast,,as I feel unwell.

Requirements: no lemon juice, mushrooms or wine/ lentils or chick peas. :o

I have chicken thighs. Son going to shop, to get what I need. Thanks.

Leeks, Rosemary and carrot and a bit of stock. Bingo. Although Casserole will take as long, indeed longer to prepare and cook than just roasting the thighs.

I actually find this very nice

There are a few different flavours but that's the nicest.

Coleman's also do a similar product at double the price but may be easier to get a hold of at your supermarket.

Thanks, I think I will go down the chicken, veg, potatoes, leeks, rosemary, route. I do cook a lot, but never really successful with chicken stew. Better with soups, but my sons want substance today:D thanks for reply.

If I want more substance in a stew or casserole or just want to stretch the meat a bit further, I add a tin of beans. Haricot or butter beans, whatever I have in the cupboard

Too late for today (and not a slow cooker recipe :p) but I did see this last night.

Curried chicken pot pie. You can leave off the pastry and it's a chicken stew. Leave out any ingredients you don't fancy (or have) or add in others (more veg).
I'd think about shotting some potatoes/sweet potatoes/butternut squash/swede in and also some greens such as garden peas at the end.
