Here's a fantastic exchange from one of the episodes people consider 'the beginning of the end':

Homer : [driving the family car] Okay, once more. Where are we going?
    Mrs. Krabappel: To Capitol City.
Homer: And why are you and the old lady in the car?
[Camera pulls back to reveal Mrs. Krabappel and Mrs. Skinner sitting next to him]
Agnes Skinner: We're going to talk Armin Tamzarian into coming back.
Homer: And why is Marge here?
[Camera pulls back again to reveal Marge riding shotgun]

Marge: I came up with the idea.
Homer: And why am I here?
Marge: Because the streets of Capitol City are no place for three unescorted ladies.
Homer: And why are the kids here?
[Camera pulls back to reveal Bart, Lisa and Maggie in the back seat, sticking their heads out of the window]

Marge: Because we couldn't find Grandpa to sit for them.
Homer: Then why is Grandpa here?
[Camera pulls back to reveal that the kids are sitting in Grandpa's lap]
Abe Simpson: Because Jasper didn't want to come by himself!
[Jasper turns his head around, revealing he is riding in the very rear]
    Homer: Meh, fair enough.

    Blood Feud (Season 2 finale)

*Homer walks into the post office*

Homer: "Hello, my name is Mr Burns, I believe you have a letter for me?"
Clerk: "okay Mr Burns, and what is your first name?"
    Homer: "....I don't know"

    :D

That's the episode where the show went from bring really good to being my favourite show (until season 11).

One of my favourites is Bart's Inner Child. "We're all fine the way we are" :D

I also love You Only Move Twice. I seem to love the episodes with Albert Brooks, I noticed that after I thought about my faves.

    "...nobody ever says Italy..."

Homer The Clown was a great episode.
Homer making a circus tent out of mashed potatoes.

Homer : "THAT'S IT ! You people have stood in my way for long enough ! I'm going to Clown College"
Bart : "I don't think any of us expected him to say THAT !"

Hehe it really is one of my favourites. Another one I love (for the randomness and delivery):

Marge: Have you noticed something different about Bart?
    Homer: New glasses?
Marge: No. He just seems disturbed lately.
Homer: Probably misses his old glasses.
Marge: I want to see what's bothering him, but I'm afraid I'd be smothering him.
Homer: Yeah, and then you'd get the chair...
Marge: That's not what I meant.
Homer: It was, Marge. Admit it.

One of the more recent (ish) ones, Apocalypse Cow is a fine example of a diamond amongst a barrage of rubbish.

Another recently episode, although I forget the title and season, was when Lisa tries to save a beached whale. It's beautifully written.

    Mindy: What's wrong?
Homer: [crying] Oh yeah like you don't know! We're gonna have sex!
Mindy: Oh, well, we don't have to.
Homer: Yes we do. The cookie told me so.
Mindy: Well, desserts aren't always right.
    Homer: But they're so sweet.

    :D

    Also 'Mountain of Madness'

Marge: Don't worry, kids. This is a national park. We can have lots of fun!
Ranger: Oh, I'm afraid that's no longer true, ma'am. Budget cutbacks have forced us to eliminate anything the least bit entertaining.

Marge and the Ranger were the most amusing parts of that episode. :D

Bear: Only who can prevent forest fires?
[Bart presses 'YOU' instead of 'ME' next to the bear.
Bear: You pressed YOU, referring to ME. That is incorrect, the correct answer is YOU.

    :D:D

My favourite episode by far is My Strummer Vacation purely to the fact that I like Mick Jagger.

A collection of Homer's thought bubbles and flights of fancy:
