I usually keep a carton of UHT milk for 'emergency' milk, just for tea.
A good indicator for where it should be stored can be taken from the supermarket - they keep it piled up on the floor in ours, nowhere near a fridge! (Although I do keep it in the fridge for storage).
Definitely keep it refrigerated once opened - and no, it doesn't taste the same as 'normal' milk.
I don't care what it says on the carton, my experience is that in practice opened UHT milk does last a couple of days longer than ordinary milk when opened.
In summer I keep it in the fridge, in spring, autumn and winter I don't bother.
