OP, if you are cutting out wheat you could try rye bread instead.
Someone I knew used to eat matzo crackers instead of bread - I have never had them myself so no idea what they are made of or taste like.
Not so much sandwiches, but instead of toasted bread at breakfast time, I now have a toasted Rankin Irish potato farl (with some butter on) instead. They're 91% potato.
