The longest running show I have seen every episode of is....

The Waltons, 210 episodes and 7 TV movies. Watched them all off True Entertainment when the channel first launched on freeview.

Little House on the Prairie, 204 episodes and 4 TV movies plus 1 special. Again courtesy of True Entertainment.
Star Trek Deep Space Nine, 176 episodes.
Star Trek The Next Generation, 176 episodes.
Star Trek Voyager, 172 episodes.
The Mentalist, 151 episodes.
Columbo, 69 episodes. (Most of these were feature length so less episodes but more run time)
Homicide Life on the Street, 122 episodes and TV movie.
Highway to Heaven, 111 episodes.
Star Trek Enterprise, 98 episodes.

I'll only include the top 10 otherwise I'll be here all day.

Sitcoms I have completed.

Frasier, 264 episodes.
Friends, 236 episodes.
Everybody Loves Raymond, 210 episodes.
The King of Queens, 207 episodes.
Scrubs, 182 episodes.
Seinfeld, 180 episodes.
Malcolm in the Middle, 151 episodes.
3rd Rock from the Sun, 139 episodes.
My Name Is Earl, 96 episodes.
Curb Your Enthusiasm, 80 episodes.

Not to take anything away from you, but I think most of us could tbh, it is a TV sub-forum after all. People who frequent these parts of DS generally have a plethora of TV shows under their belt.

All of 24 (I think that's 205 episodes including Redemption)

    Stargate SG-1 / Atlantis / Universe

Star Trek TOS and Enterprise but missed some big chunks of TNG and DS9

Peep Show (8 series but only half a dozen episodes per series so not that many in total)

Buffy (but not all of Angel)

Lots of other series that ran for 5-6 seasons - Lost, Breaking Bad, Fringe, Battlestar Galactica

I've seen every episode except the one that Channel 4 pulled when Sarah Payne was murdered.

As to the original question, the runaway winner in my case is the original Law And Order. As mentioned by others, seen every episode of ER, 24 and X Files. Other long-running shows where I've seen everything include Special Victims Unit, the original CSI and NCIS.

I've seen/heard every episode of Doctor Who. I own every episode on dvd/blu-ray/CD (audio of the 97 missing ones.) There are 813 according to wiki.

In fairness, watching all of ST Voyager is probably most impressive, given how gosh awful that show is. ;-)

Seen all Star Trek in its various incarnations, in specific regard to Voyager there are selected episodes I've watched and enjoyed more than once and others that I have no desire to ever see again!
