Not to take anything away from you, but I think most of us could tbh, it is a TV sub-forum after all. People who frequent these parts of DS generally have a plethora of TV shows under their belt.
I also watched all 217 episodes of Smallville.
I've also seen all 220 episodes so far of Supernatual & 245 episodes of Greys Anatomy!
The X Files to that is a very long show to see.
Others
Most Haunted apart from the last 3 new episodes which on my youview
All Star Treks
Now watching The Simpsons but only near end Season 3 so still quite a few left to go but its my new best show.
Little House only about upto EP 12 so way more to see.
Baywatch on to Season 4.
Smallvile season 8 to see next.
Highway to Heaven watching season 2 now.
The X Files
Friends
ER
Smallville
Buffy The Vampire Slayer
Angel
Stargate SG-1 / Atlantis / Universe
Star Trek TOS and Enterprise but missed some big chunks of TNG and DS9
Peep Show (8 series but only half a dozen episodes per series so not that many in total)
Buffy (but not all of Angel)
Lots of other series that ran for 5-6 seasons - Lost, Breaking Bad, Fringe, Battlestar Galactica
Angel
Oz
The king of queens
Prison Break
Two and a half men
At the moment watching grange hill and hope to watch every episode (600)
I've seen every episode except the one that Channel 4 pulled when Sarah Payne was murdered.
As to the original question, the runaway winner in my case is the original Law And Order. As mentioned by others, seen every episode of ER, 24 and X Files. Other long-running shows where I've seen everything include Special Victims Unit, the original CSI and NCIS.
Beverly Hills 90210 (10 Seasons) (293 episodes)
Friends (10 Seasons) (236 episodes)
Smallville (10 Seasons) (218 episodes)
I am not being funny but that show had 56 episodes. Not much to get through.
Star Trek Deep Space Nine, 176 episodes.

Sabrina the teenage witch
Kenan and Kel

Goosebumps
Breakout kings
Seen all Star Trek in its various incarnations, in specific regard to Voyager there are selected episodes I've watched and enjoyed more than once and others that I have no desire to ever see again!
