Turkey crown recipe...

Hi,

I'm after a turkey crown recipe. I'd love the meat to be nice and moist with some flavour to it, but I haven't a clue were to start as i've never cooked a turkey crown before.

It's not for the main meal on Christmas day, it's actually for sandwiches on Christmas eve as we are having guests over. I'm making a pork and chestnut stuffing to go alongside it on the sandwiches. Not sure of the weight, I just asked the Butcher to ensure it would be enough for 8 people for sandwiches.

So...any ideas? I was thinking of doing a Nigella and brining it, but would that work with a crown? Any other ideas? And roughly how long and what temp should it be cooked?

    Cooking a crown is simpler because the legs and crown cook at different rates - and, they fit in the oven easier!
    I've ordered a whole turkey but will remove and freeze the legs for simplicity of cooking and because you can tire of a whole turkey that has to be eaten within the week.


    I've used the "Nigella's bucket" method for the last two years.
