usually video out of the console in to a PC capture card, although you can get stand alone capture setups.

There will be a device connected between the console and TV/monitor. The device can be a standalone unit or part of a PC (as stated by alternate) which captures the audio/video and writes it to a HDD. Some encoding might be done at the same time to reduce the size of the captured video.

Raw video can reach 4GB in well under 5 minutes at resolutions higher than 720p.

Might be a while before we see YouTube in game vids of the PS4, because they can't do it. Sony are apparently looking into this, seems they forgot about it with all the things going on with the share button.

With the share software maybe but most established youtubers will use their own capture setup, so long as it takes HDMI and can get around any HDCP it might have.

^^^ Like I said you can't, HDCP won't allow it, on the PS3 you bypass it using composite cables, they're not on the PS4.

Check the internet out there's loads on it, Yoshida (sp) has tweeted he's looking into it

Ever since the master keys got leaked you can bypass HDCP. The commercial grade solutions are expensive and another failure point in the chain but they are workable.
