Will I get on the flight with a bag 58x38x20 as hand luggage? The site says 56x45x25, so I am 2cm to tall but under size in the other dimensions. I keep reading that people always take over-sized bags.

Your cabin bag will be checked for size with a baggage gauge at the Bag Drop desk and at the boarding gate.
If your one permitted cabin bag exceeds the maximum bag size, the Bag Drop desk will ask you to check the bag into the aircraft hold and a charge of £30 will apply.
If you go directly to the boarding gate and your one permitted cabin bag exceeds the maximum bag size rule, your item will be checked into the aircraft hold and a charge of £45.00 will apply.
Personally based on that I would risk it. Especially as it's under the size in the other dimensions.
Of course you still have to be prepared to pay the fine to put it in the hold in case they do stop you and say it's too big, but I think you could probably squeeze it into the bag checker if it's smaller in the other dimensions.
There are plenty around, and the supermarkets do cases which look very good value. I have a couple from Tesco which have survived a few trips and cost under £20 each.
Note that any duty free that you buy can be taken on board in a separate bag (containing only duty free goods!) and is not included in the bag size..
Then there's the question of what they do with it on the plane. If the bag's full, it won't go in the locker end first. So it'll have to go in sideways. That'll make the OP popular.
I think a lot will depend on how full the flight is. However, if it's a busy flight, they would probably insist that oversized bags went into the hold - and it wouldn't be for free!
The only cabin bags which go in the hold for free are those between EJ's "guaranteed to go in cabin" size and their maximum size.
Buying a checked bag is something which you have to do specifically during the booking process, it can't happen accidentally, or without your knowledge.

Fair enough : you must have booked luggage without realising it.
You only guarantee the 56 x 45 x 25 size if you have paid for an upfront or extra leg room seat, or you're an Easyjet Plus member.
