TCC, Trouble, (the old) Cartoon Network, (the old) Nickelodeon, (the old) Disney Channel. TV was IMO so good in the '90s and I was only young yet I remember most of it.
Other channels I miss are MTV, VH1 (even though they're still going), The Hits, TNT, CMT, The Family Channel, the early days of Challenge TV (with Prize Time). I love watching some stuff on TV Ark when I think of some of the good stuff.
The Hits. It was a great channel and I liked the way it was nearly always pure music and IIRC was quite varied. Also the old UKTV Gold (before the rebrand).
The old ITV contractors like Thames, ATV/Central, Granada, Yorkshire and Southern, these all made really good programmes that were as good as anything on the BBC.

Yorkshire Television in the 70's before it began the slow decline into the rubbish of today.

There was briefly an "old adverts channel", I think it lasted about 2 months ....
I also miss the USA public tv derived "performance channel", it had some good stuff ........
