Replacement S3 Phone - Backing Up

Hi there.
I'm backing up my phone images/audio/video etc. as I'm getting a replacement phone as my current S3 is damaged.
I've exported all of my phone contacts to my sim card (which I assume I can import when I put my sim card in the new handset?)
Can i do the same with all of my apps I've downloaded or do I need to make a note of them all and re-download them when I get the new phone?

I always store my contacts on my SIM, never on my phone that way if I need to change phones quickly I don't lose any contacts.
I know that if you go to Google Play it'll have all the apps that you've ever downloaded - you just need to re-download the ones that you use.
As well as the above getting backed upto Google I also backup with Kies, manually backup my memory card to my PC and also use My backup pro app to backup to the memory card and also their cloud.
You can't backup apps without rooting your phone but Google Play will automatically re-download most of them as well as some of your app data.
Contacts are best stored on Google because again, those are automatically synced and re-downloaded to any phone you have logged in under your account.
