I also used to love Rod Stewarts version of 'Your Song'.
Haven't heard it for years though, but his vocals were really good in that song. Not a fan of his normally.

Hurt - Johnny Cash
Hounds of Love - Futureheads
We will become siluettes - The Shins
I would also add:
Such great hights - Iron and Wine (from the same ep as the shins cover, no less)
Not in love - Crystal Castles ft. Robert Smith
Jolene - The White Stripes.
Sabotage - Cancer Bats
Roll over Beethoven - The Sonics
Common People - William Shatner
Voodoo People - Pendulum (Ok they called it a remix, but its basically a cover)
Postcards from Italy - Florence and the machine
You've got the love - The XX (Again, technically a remix, but basically a cover with a sample in it)
Viva Las Vegas - The Dead Kennedys.
Edit: The Atreyu version of Bon Jovi's "You gave love a bad name" is always good for the "lolz".

As is the rather odd screamo version of Paramore's "misery business" by Sea of Treachery, which might just be better than the original.

Joss Stone - Fell in love with a boy. - Brilliant

Anything by Richard Cheese & Lounge Against The Machine is automatically the best cover you've heard in your life. This is not opinion, but pure fact.
