    This sag paneer
Step one: fry paneer cubes in oil which has been made aromatic with cumin seeds, then set aside. Step two: puree one large onion, thumb of ginger, two cloves of garlic and two small green chillies together with a level teaspoon of turmeric, plus salt and white pepper. Slide this mixture into hot oiled pan, and add two tsp cumin powder, one tsp of coriander powder and one of garam masala. Let it cook down properly. Step three: puree a ripe tomato (or half of a small can of canned toms) and some coriander stalks (save leaves for garnish), then add to pan. Step four: add pureed spinach. I *always* puree my spinach from the raw leaf, whether my spinach is the big stalky leafy kind or the soft baby leaves that come in salad bags from supermarkets (which I prefer, purely because there's never any grit). Canned spinach is also fine, really. A good thing to remember in the springtime: wild garlic leaves mix well with spinach, and give a more subtle garlic flavour than bulbs.

As this version is wet, I tend to add a little water to the mix after the pureed spinach goes in the pan, because it helps with cooking-down. If your fresh tomato is anything other than deep red and ripe, a big squirt of ketchup will add to its flavour. At this point, you should add the paneer fried earlier and gravy up the dish with a heaping tbsp of yoghurt. Let it simmer as you make basmati rice, and when that's done the consistency of the saag paneer should be perfect for serving. It's even better in the next couple of days.
