Alternative to mashed potatoes

Cook a large sweet potato in microwave, when cooled down, remove skin. Using the stalk and leaves etc of a cauliflower (ie the stuff you usually throw away), wash and chop them up and put in a bowl with a chopped parsnip and chopped carrots and a little water. Microwave until soft. Blend until you have a puree, the add the sweet potato and mix well to firm up the mixture. Add a small knob of butter, salt and pepper to taste, and a dash of milk or cream.
You can also add a de-jacketed jacket potato if you want to add some carb.
Delicious, and healthy.:)

only trouble with suedes is that they're a bit of a b....... to peel but they're very nice

Yes quite . I would never attempt to peel suede.
I prefer mashed carrots and parsnips. Knob of butter and you've instant heaven
I often do a 3 root mash - carrot, parsnip and potato (well, potatoes are not roots, but you know what I mean!)
And of course, colcannon, which is delish.
i did mashed swede last week with my roast ..also mashed carrot was nice too but tis a buggar for peeling and cutting

Yes, had celeriac mash recently with blackened cajun chicken on top - it really was good.
Truly versatile.
I absolutely love mashed butter beans. I add a bit of paprika to mine.
