Alternative to mashed potatoes

Cook a large sweet potato in microwave, when cooled down, remove skin. Using the stalk and leaves etc of a cauliflower (ie the stuff you usually throw away), wash and chop them up and put in a bowl with a chopped parsnip and chopped carrots and a little water. Microwave until soft. Blend until you have a puree, the add the sweet potato and mix well to firm up the mixture. Add a small knob of butter, salt and pepper to taste, and a dash of milk or cream.

You can also add a de-jacketed jacket potato if you want to add some carb.

Delicious, and healthy.:)

    Years ago we often used to have a blob of mashed carrot and suede instead of potato

    only trouble with suedes is that they're a bit of a b....... to peel but they're very nice

    BIB...sorry, that made me laugh. Bet it was tough as old boot leather.;-)

    Yes quite . I would never attempt to peel suede.

    I prefer mashed carrots and parsnips. Knob of butter and you've instant heaven

    You can mash celeriac as well.
    I often do a 3 root mash - carrot, parsnip and potato (well, potatoes are not roots, but you know what I mean!)

    And of course, colcannon, which is delish.

    Swede has to be the most disgusting of all the root crops and it ruins absolutely everything in which it's included. The fact that it's an essential ingredient of Scottish "cuisine" speaks volumes.

    i did mashed swede last week with my roast ..also mashed carrot was nice too :D but tis a buggar for peeling and cutting :o

    You can do swede in the microwave like the op does the sweet potato. Put it in whole cook it then cut in half and just scoop it all out. Much easier than peeling, chopping and boiling.

    Why would anyone need an alternative to mashed tatty?, it's the best potato you can get, even better than chips (well nearly :)).

    I sometimes bake sweet potatoes, remove the skin, fry some onion and garlic and then add the sweet potato and a bit of nutmeg to the frying pan and cook for a few minutes.

    Yes, had celeriac mash recently with blackened cajun chicken on top - it really was good.

    I really love celeriac. It can be used in so many different ways - grated raw as a remoulade, sliced raw into a salad, roasted, steamed, boiled etc etc.
    Truly versatile.

    Empty a tin of butter beans into a saucepan. Add 1-2 cloves of peeled garlic and then heat gently until there is only a little liquid remaining and the garlic is soft (about 15-20 mins). Add a knob of butter, mash gently then stir in some chopped coriander. Divine.

    I absolutely love mashed butter beans. I add a bit of paprika to mine.
