A lot of places are open throughout the day and are clubs, just a different vibe to them. Look at Canal Street for an easy example, clubs are clearly open throughout the day. Then there are those places open in day time that are converted into clubs at 9/10pm, sports bars etc.
Also by definition you can go 'clubbing' before clubs are open, things such as predrinking, a meal before hand etc.
