No eggs or butter in cakes ??

I have just made a batch of cupcakes following an American recipe.
There are NO eggs and NO butter in this recipe.
It replaces these with mayonnaise :eek:
Needless to say, they were rubbish !
There was a hard crust to them and the insides were "doughy"
When I squeezed the inside in my hand, it just stayed in a damp lump.
Threw them all in the bin (24 of them !)

    well they did contain egg, as mayonnaise is made of eggs.

    ...still sounds revolting though!

    Would it work with vegan mayonnaise though? Haha.

    I remember them making a mayonnaise cake on Blue Peter in the mid 90s at some point. I don't think it's a particularly new thing.

    You mean to say a cake recipe with mayonnaise didn't taste delicious? I am surprised.

    In order to lighten the density and texture of soda bread, I've sometimes put a beaten egg into the mixture but I have also found that a mashed up banana does the same thing and imparts a nice taste to the bread too. :)

    I'm into baking at the moment. I love making cupcakes, and I googled "Unusual ideas for cupcakes".
    The recipe I tried came up, so I thought I'd do it.
    I wish I hadn't bothered - it was foul !

    Some top patisseries use that method. I was watching a show called Unique Eats yesterday about top US restuarants/diners etc and one of the recommneded places made cakes using this method.
