Chicken Balti Recipe
I want to make a simple Chicken Balti for upto 8 people, has anybody got one please or can post a link to one? Thanks

3lb chicken, skinned & cut in to 8 pieces
3 tbsp corn oil ( I use any) 3 medium onions sliced 3 medium tomatoes sliced 1in cinnamon stick 2 large black cardamom pods 4 black peppercorns 1/2tsp black cumin seeds 1 tsp ginger pulp 1 tsp garlic pulp 1 tsp garam masala 1 tsp chilli powder 1 tsp salt 2 tbsp natural yoghurt 4 tbsp lemon juice tbsp chopped fresh coriander 2 fresh green chillies, chopped Heat oil in a large deep pan. throw in onions & fry until they are golden brown. Add the tomatoes & stir well. Add cinnamon stick, cardamom, peppercorns, black cumin seeds, ginger, garlic, garam masala, chilli powder & salt. Lower the heat & stir fry for 3 - 5 mins. Add the chicken pieces, 2 at a time & stir fry for at least 7 mins or until the spice mixture has completely penetrated the chicken pieces. Add yoghurt to the chicken & mix well. Lower the heat cover the pan with a piece of foil making sure the foil doesn't touch the food. Cook very gently for 15 mins, checking once to make sure the food is not catching on the bottom of the pan. Finally add the lemon juice, fresh coriander, & green chillies, stir & then serve at once. Sorry may not seem that simple but its the one I make. I have made this twice now & both times we really enjoyed it. Seeing all the ingredients may put you off but once you have them in they last quite some time. |
