4oz fine oatmeal
2oz flour
1oz sugar (I use demerera)
1tsp baking powder
pinch salt
1 med egg
3oz runny honey

Pre heat oven to 180 / fan160/ gas 4

Put oatmeal, flour, sugar, baking powder & salt into a bowl and mix.
Add egg then honey, mix then knead till smooth
Place spoonfulls onto baking tray and cook for 20 mins

Here is another one,

8oz Butter
12oz Sugar
2 large eggs
1tsp lemon extract
1 tsp vanilla extract
20oz flour
2tsp baking powder
1/2tsp salt

2 oz sugar for decoration

Pre heat oven to 180 / 160 fan / gas 4

Beat butter & sugar till fluffy, add eggs bit by bit, and extract and beat again.
Add dry ingredients gradually and beat well
Cover & Chill for 1 hr
Shape into 1" balls and roll in sugar (or crushed cornflakes)
bake for 8-9mins. Leave to cool for a couple of minutes before transferring onto a wire cooling rack

First one is simple, second one is easy if you have an electric whisk, both are yummy! enjoy!

I do oatmeal cookies using this recipe:

3 tablespoons butter, room temperature
1/2 cup brown sugar
1/4 cup honey
1 egg
1 tablespoon water
1/2 cup wholewheat flour (all-purpose is good too)
1/2 teaspoon salt
1/4 teaspoon baking soda
1 1/2 cups rolled oats
then 1 or 2 of chopped figs (optional) or raisins (optional) or chopped walnuts (optional)

at 180C for 15 minutes.
And you could swap the honey for peanut butter and the figs/walnuts for chocolate chips I reckon - they would still be very moist, just a bit less healthy!

Dont forget ya chocolate chips(or chocolate drops) (i get them from Asda ) when i do choccie chip fairy cakes..
