Interesting ideas for rice?
I could easily go to the shop and get some Uncle Ben's flavoured rice but I'd like to make my own.
I have tried and failed. I basically tried a few spices added to the rice when boiling and all that done was lightly flavour it and wasn't really worth it. Any ideas of how to make plain rice more interesting? I prefer brown rice to white, too. |

I cook some rice and put chicken and a fish (cooked lol), into it, add some peas, n sweetcorn..Seasoning, etc,,chopped up ham, cut fresh tomato into it..Stir all up and serve onto plate,,yum..Its like a paella..Its filling too, dont need anything else with it, i do it quite often..

Probably not what you are looking for but asbsolutely amazing.
Suppli di Aranancini Ok, so make up a plain rissoto (use a pack if you want but east to make from scratch). Fry a chopped small onion and a couple of cloves of garlic in butter till soft, add 120g of risotto rice and saute for a couple of minutes. Add a ladle of veg stock and stir until the liquid has gone. repeat till the risotto is done (rice will be firm but not chalky) and their is very little liquid left. It will be quite starchy which is exactly how you want. Leave to cool (you can add some grated parmesan or grano padano if you wish. make a basic bolognese sauce up and when both are cool add a couple of tablespoons of the sauce to the rice and mix (use the rest for a lasagne). Ok, now you want to take a handfull of the rice mixture and push a small piece of mozzarella into the middle. make sure the rice ball is quite tight and firm. Roll in flour then beaten egg then coat with bread crumbs. Do this till you have no rice left (or you have made enough then freeze any left over rice). deep fry until golden brown. Don't use too high a heat as you want the mozzarella to have melted and be stringy. When they have all been fried you can put them in the oven for 5 minutes to heat through and make sure the mozzarella is melted properly. Lovely!! |

Making your own savoury rice. Cook the rice in chicken stock & add peas, sweet corn, chopped peppers, chilli if you like spicy.
Basmati rice is better if you don't boil it like normal rice. Soak the rice for an hour then rinse to get the starch off. Fried some onion in cooking oil, add the rice & stir then add about half a pint of stock, place a lid on & serve when the rice has absorbed the stock. |

For two people, a star anise and 2 bruised cardamom pods in 175g rice. Boil for 10 mins in 300ml water, leave with lid on for 5 mins extra then fluff with a fork before serving. YumYum

I make a Mexican-style rice. I heat a spoonful of vegetable oil in a pan. Add the uncooked rice with some chopped onion. Fry the rice and onions just for a couple of minutes in the hot oil until the onions are starting to turn translucent. Add chicken stock (2 to 1 ratio rice to water) and a spoonful of tomato puree along with a handful of chopped coriander and a dash of salt and chili powder. Cover and cook for about 20 minutes until done. You can add hot sauce if you want some heat.

My wife sometimes does rice with the chicken stock, like others have described and she also put some saffron in it as well. That comes out really nice.

Just thought of another super easy and tasty rice dish - the Greeks do something called Spanakoriso which means Spinach Rice and is basically sauteed onions (white or spring) and spinach mixed into uncooked rice and then simmered off with water and lemon juice or stock and then served up with crumbled feta. You can also replace the spinach for rocket or beetroot leaves, and use wine instead of lemon juice - lots of variations basically but it's a great lunch / starter type dish.

I rinse the rice in cold water a few times, then disolve a chicken stock cube in water, add a cinnamon stick, a few whole cloves, a star anaise and a few bruised cardamon pods, and boil. gives a fabulous flavour!
