Pizza Bases

Can anyone please tell me how to make an authentic pizza dough/base?

Used a ready made one, well one you have to add water and knead etc but just tasted of shortcut pastry - not good!

Any other advice on bases etc etc would be appreciated

I tried it the other week and even though I had problems it tasted good. I was surprised about the amount and the shape of the dough and tried to fit it into a dish and didn't get it even and wasted a bit.

I've got another pack in the fridge and will be making it in the next day or two using a backing tray to make it easier. It should easily feed 2 to 3.

A true pizza base must have olive oil in it.

I've searched for a long time and come up with what I consider to be the best.

12 oz of strong bread flour warmed gently in the oven for 10 mins

Take out and add 2 tsp of fast acting dried yeast, one of sugar and 2 of salt. Pour in 2 tbs of good olive oil and 8 fl oz of warm water.

Stir it all together well and tip onto floured surface and knead it for about 5 mins. It should be nice and elastic when you stretch it.

Leave to prove in a warm place for a good hour. Cut into 4 and keep in plastic bags in the fridge for when you want to roll out.

just mix plain flour and water together. It works just as well and it gets kids invoved in making them and getting messy!

That just wont have the same effect as a proper pizza base. It may be fine for a quick knockup, basically a flat bread with topping but you can do the same with a stottie, ciabatta or baguette.

Slightly off topic but here is my second experience of the Pillsbury Pizza Kit

The only problems are the price.
£1.80 for the kit. This includes a jar of sauce and half of that is plenty. So now I have a half jar of tomato sauce left over. I'll use it - knock up a patatas bravas or spaghetti dish.

£1.50 for mozzarella cheese. I got a block of fresh pizza mozzarella from Tesco, but even the bags of grated mozzarella are not cheap.

£1 for pepperoni slices. These were Asda's smart price range (budget) and on special offer. I still have 1/2 - 3/5 of the pack left. I only used them over half the pizza but it was a nice balance. Not too rich.

Not too bothered about paying for the peppers & onion because I'll definately use them in other dishes.


So basically the all the ingredients, apart from the base, will be enough to make two pizzas, and if you buy another kit you have a space jar of sauce

So cheaper than a takeaway 12" pizza and as good as for the type of pizza I made.

Overall i'm happy with the result but may try a pizza flour mix next time so I can make the base when I want and the size I want.

I made my first pizza base from scratch last month, but using pastry sounds awesome!
