Chicken Kebabs
I love chicken kebabs from my local takeaway , now i would love to make my own homemade ones .
When i have them from my takeaway , the chicken is not just plain , it has a lovely flavour , i'm not sure if it has been marinated or somthing . It's not the flavour from the grill and it is not chicken tikka . If i make them myself and just put pieces of chicken on a skewer and then on a grill to cook , it will have no flavour - it will just be plain . I need some help on what to / how to flavour the chicken . Please help me! Thanks |

I'd say marinate the chicken in some chilli sauce and tabasco sauce mixed together and leave it for a while before cooking the chicken. The only I get in my local take-away have a chilli taste off of them.

Cut your chicken into 1" chunks,
for a teriyaki style: 1 tbsp sunflower oil 5 tbsp soy sauce 5 tbsp mirrin or dry sherry 1 tbsp caster sugar 1" fresh root ginger, peeled & finely grated 2 crushed garlic cloves for a satay style: 1 tbsp soy sauce 1 tbsp peanut butter 1 tbsp clear honey 1/4 tbsp ground cumin 1/4 tbsp ground coriander for cajun style: 1 tbsp olive oil 1 tbsp ground coriander 1 tbsp paprika 1 tbsp ground cumin Mix all together & add chicken, cover and leave in fridge ideally overnight or for a few hours. Thread chicken onto skewers and grill, brushing the remaining marinade over as they cook. |

A clasic marinade for chicken is lemon, oregano, paprika and olive oil - so simple but delicious.
You can also experiment with tastes you like - honey, wholegrain mustard and garlic is good or soy, ginger and honey, or yoghurt, cumin, garlic and chilli - any flavour combo that compliments a mild meat or fish dish will work (ooh, lime, chilli and coriander is great! too - just remembered!). |

As with the post above there are variations on the style of kebab. Does your takeaway do a Mediterranean style or more of an Indian style?
A simple Mediterranean style could just be a marinade of garlic, chilli and lemon juice. An Indian style may include marinating the chicken in yoghurt and spices. I remeber knocking up a quick version using cornflour, water/milk and some tandoori & curry powder. It turned out quite good. |

I too love a nice chicken shish and have never been able to replicate it
BUT that makes a good excuse for a takeaway

When I make chicken kebabs I marinate my chicken in peri peri sauce overnight. I then put mushrooms, peppers, cherry tomatoes, chicken, red onion on the kebabs. Lovely!

My local take away puts too much peppers into their kebabs. The last time I had one I woke up during the night convinced I was having a heart attack. It was, of course, only severe heartburn
