Couple of pints of water, bring to boil and add 2 chicken (or veg) stock cubes. Peel and chop loads of carrots and an onion add to stock - I use coriander paste from a tube but a small bush of it chopped is just the same. Simmer for 20-30 minutes until carrots are soft. I use a hand blender and blend till smooth. Practically no calories and very very tasty. I make it when losing weight but hubby is always away with it lol

Tastes fantastic and is so easy to make - no faffing around

PS -I sometimes add garlic if I fancy it

I can thoroughly recommend this recipe, it's absolutely scrummy. I added slightly less water (around 900ml) as I like soups to be quite thick.

Basically I just grate a load of carrots, a few potatoes and cut up an onion, add everything to the pot, add water to just above veg level and boil, I then add a few veg stock cubes and ground corriander, blend with a hand blender and serve with some crusty bread. You can also add a little cream to give it a richer flavour.

We make loads of this soup at work, this is an easy method to follow:-

Sweat off a little celery, a leek, an onion and lots of carrots in a pan, cover with chicken or veg stock.

Bring to the boil leave simmering for a while till carrots are completely cooked through, toast some corriander seeds, crush them add to soup leave for ten minutes more to get the flavour through.

Use a blender or hand mixer to puree, chop a little fresh corriander, pass the soup and add the corriander a little double cream and season.

I am such a lazy cook I get 1 bag of casserole veg (carrot, swede, leek, onion, i think), 1 bag of carrot, fry in frying pan with some marg. Add veg stock cube, corainder, garlic and ginger. Add 2 pints of water. Leave in slow cooker till can't stand it anymore.
