Help me change my diet?
I am attempting to change my diet from fatty, unhealthy crap to a decent varied diet. I am really struggling to keep it up for any length of time though.
Example, last night I had smoked mackerel, unpealed new potatoes boiled and a mini corn on the cob. More ideas like this please? My normal evening meal would consist of something I can stick in the oven (such as chicken kiev) along with my oven chips, leave for 20 minutes and go eat it. Breakfast, I enjoy cereal, porridge and such like. I have changed from full cream milk to semi-skimmed milk. However, it's so much easier to grab a sausage sandwich on the way to work. Lunch at work is difficult, I bring sandwiches some days but get fed up of them too easily. When that happens, it's off to the burger van (that's the choice, burger van or sandwiches). We have microwave/multi grill/oven at work where I could heat up something or whatever, but have no ideas. So, what I am looking for really is healthy meals for a single bloke (ie, can't open loads of packets of veg without them going off). Unfortunately I am a bit fussy and really cannot eat anything with tomato or mayo in them. That really limits my healthy choices when buying food. |

The problem seems to be with what you can do about lunch at work. How about fixing up a rice dish - prepared the night before - that you can take to work? Or a cold pasta dish. There's loads of recipes out there on the net. A work lunch doesn't have to involve bread, there are alternatives. |

You could always make a batch of soup at home, take it to work in a microwavable (and sealable!) tub and heat it up there. You could even take a crusty roll with you. There's plenty of simple soup recipes about. Google threw this up: http://www.goodtoknow.co.uk/food/178...-than-50-soups

I have put on weight since going back to work after a career break, i found relying on the convenience foods easier but a little effort has really paid off.
First thing i did is after seeing a link on here investing in one of these: http://www.beckyandlolo.co.uk/produc...p_lunch_boxes/ I take salad/fruit/meat or fish/coleslaw or potato salad (ready bought), alternatively i cook a little more dinner the night before and box it up ready for work the next day. Tonight i'm having cajun chicken and rice, that is easy to heat up at work. I buy bags of ready prepared salad leaves and keep them in the fridge all week in those "stay fresh" bags (i buy them at lakeland and reuse them), i throw in a few tomatoes and a bit of fruit and i have everything i need to keep me going at work AND away from the vending machine. Your food sounds good, you just need to get some variety in there so you don't get bored

I went on to a healthy eating plan about 4 weeks ago, I feel great & have lost nearly a stone in weight.
For breakfast this morning I had poached egg between 2 small slices of wholemeal toast, a small banana & cup of tea. For lunch a bagel with low fat soft cheese & smoked salmon & for tea I had grilled steak with salad. As I am trying to lose weight I am sticking to calorie control but if your just wanting to change to healthy eating then your not as restricted. |

It all depends on what you like. There are always healthy or healthier versions on the internet. It is simply lowering the fat content and making food taste nice with herbs or sambal if you love heated spice.
Go to the greengrocers and buy single items of fruit and vegetable. Bags as you know are designed for families. Some of the bagged variety can be frozen such as cauliflower/courgettes. Lentils make a cheap and healthy meal and takes hardly any of your time to make something delicious. Check out my kitcheree recipe for an idea as it that uses enough vegetables and spice as like you,I live a single life in the home. Omelettes are very tasty meals. I made a lovely herb omelette with a bit of sambal to give it spice. A light oil cooks the omelette just as good as butter or you could use those sprays. Otherwise it could have been bland as I love my food hot. Salad wise,I buy either a round lettuce or two little gems. I also buy peppers and spring onions. I love to put some oil in a pan with some cumin powder and then make a warm salad of peppers and spring onions. Absolutely delicious. For lunch ideas,the internet is your friend. There is a clever woman on here who puts her lunches on a website and never seems to run out of ideas and her lunch boxes look so pretty too and so well organised. Fruit,vegetables,houmous,carrot pate,tomato and onion salad,nuts,lentil salad with a bit of spice. Raisin or "Craisin" salad is also delicious. A bit of carrot cake. Nigella Lawson's Express series is also good for ideas for lunch such as her frozen pea soup which is very tasty. |

If you're bored of sandwiches for lunch, I would recommend taking a box full of something different that can be eaten cold. There are loads of things you could have instead of bread. How about pasta salad? Or salad with lots of extras (hardboiled eggs, nuts, cheese, tuna, dried fruit, sliced apple, that sort of thing)? Or wraps with cold meat and chutney and salady bits. When I want a one-box lunch I really like cous cous with bits in - I sometimes cook the cous cous with a stock cube, or with lemon juice, and then I might add chopped tomatoes and cucumber and dried cranberries and maybe some chopped meat or maybe bits of cheese, whatever seems tasty really, and lots of chopped parsley or basil or chives - keeps it looking colourful and tastes nice. Feta is a good cheese for salads as it's tasty but quite low fat compared to others.
