There's a saying - "The customer is always right". If you want something cooked in a particular way, then surely it is your right to ask for it to be done that way.
And with all due respect, if you actually knew Jonathan, you would know that he is not full of himself, rude or arrogant at all. I have met him a couple of times, and each time, he has been polite, friendly and down-to-earth.
