I'm sorry, but that is absolute rubbish.
Pink meat is softer, easier to chew, and, most importantly, easier to digest. Studies have shown that food which is not properly digested can sit in the gut, causing all manner of intestinal problems including IBS and Crohn's (of course, this would be a build up over time, and not caused by one meal).
Dark, well done meat is tough as the longer cooking time dehydrates it. The lack of juices affect both the eating experience (harder to cut, and to chew) and the flavour (pink meats have a far rounder, richer flavour than well done). In fact, a chef like Marco may well be insulted by unsophisticated palettes requesting good cuts of meat 'ruined'. (Not that, in my opinion, they made it clear in the first place).
If Jonathan and Debbie wanted to look good on television, they might have rethought the decision to select veal, for a myriad of reasons.
