I have worked in outside catering, top class restaurants and private boxes and a corporate luncheon rooms and never have I heard the shouting and chaos of Hells Kitchen.
It was always, stop shouting, it is the diners experience and right to have a peaceful environment to talk to each other and having the chefs and waiters yelling at each other was a huge no no.
We only had two chefs to cook for over 100 covers with a large menu, no pass, it was just prepared as it went and there was no histrionics just hard slog and no prima donnas.
What is all this fuss about, Marco, just cook, there are hundreds of chefs out there who could knock your organisational skills into a cocked hat and have unskilled staff to support them most days.
