How much Ginger and Garlic for a Rogan Josh?

I'm using that recipe for a rogan josh im doing (im doubling the amounts as it's for a party) but unless I'm mistaken it doesn't say anywhere how much garlic and ginger to use. So would anyone like to take a guess at the amounts? I'm going to be using fresh garlic cloves, and ground ginger, or should I use frozen chunks like in the recipe? I'm not sure but I always thought fresh was better in cooking? Thanks. |

Hard to say isn't it? I like ginger and garlic though so i'd probably use 6 fat cloves of garlic and two thumb size pieces of ginger.

I usually put in a teaspoon of garlic pulp & the same ginger pulp, both come in jars. If your using fresh then I would say 2-3 cloves of finely chopped or crushed garlic & around an inch piece of ginger grates or finely chopped.

It tells you how much to use in the picture! About a couple of cubic inches of ginger and 4 cloves of garlic.
My tip, if you want it spicy, would be to add extra fresh spices at the end, along with the coriander. Couple of crushed garlic cloves, bit of ground ginger, a finely chopped red chilli, mix it all in just a few minutes before serving. |

The best cooks (in my opinion) work on the theory "if you like it add all you want."
The worst ones insist on precise amounts. If you like garlic and ginger (mmmm) go for it. |

I wouldn't bother with ground ginger.
I now use the English Provender Co. Garlic & Ginger pastes (available at ASDA) for sauces. They have the intensity of flavour and keep well in the cupboard. Not the ASDA own Easy Garlic.That is not nice at all, though the Easy Ginger in vinegar is good for stir frys. As above though, if you want the fresh hit then fresh garlic and especially ginger will be a good addition. |

I watched a famous chef who went around the world cooking outside- sorry I can't remember his name.Whilst cooking a curry in India he said the secret ingredient was a spoonful of coffee. I tried it and it's really lovely.
